We will be making a cooling summer smoothie, but if these ingredients don’t appeal to you, feel free to improvise – or keep reading for more recipes.
A summer favourite, and made to bring the temperature down. If possible, freeze your fruit in advance, or buy pre-frozen fruit! As for quantities, it depends on how much you want to make. The smoothies will keep in your fridge for a day or two, and you can always freeze thefruit in packs and whip one up when you need the refreshment.
1 mini watermelon
1 litre strawberries
1 bunch bananas
1 or more limes
1 bunch of mint (or basil)
Plant-based milk of your choice (almond, oat, etc)
Chia or hemp seeds
Makes 2 smoothies
1 and 1/2 cups cubed watermelon (black seeds removed)
1 cup strawberries
1/2 medium ripe banana (previously peeled /chopped and frozen)
1/2 to 3/4 cup unsweetened plain almond milk (commercial or make your own)
1 medium lime (juiced / 1 lemon yields ~30 ml)
1 tbsp chia or hemp seeds (optional)
Mint or basil to taste
Note: Freezing your fruit in advance will make an extra creamy and refreshing smoothie!
Add all ingredients to a blender and blend until creamy and smooth, adding more almond milk to thin, or more frozen strawberries or ice
to thicken. Taste and adjust seasonings as needed, adding more lime for acidity, banana for sweetness, watermelon for a more intense watermelon
flavor, and mint for a refreshing twist. Top with additional chia seeds to mock watermelon seeds! Best when fresh, though leftovers keep covered in the refrigerator for 1-2 days.
